Avocados are widely popular for their health benefits as good fats and powerful antioxidants and so we see them everywhere–as guacamole, in soups and salads. If you’ve never dreamed of enjoying avocados in smoothies, you are in for an amazing treat! Because of their creamy consistency and buttery flavor, avocados are the perfect fruit to add into smoothies. This recipe is my spin on the Vietnamese Avocado Milkshake. To make the smoothie healthier, I omit the condensed milk, which is fatty and sugary, and the whole milk, more fat. Instead, I use Greek yogurt with honey or fruit and add refreshing coconut water. Greek yogurt is thick and delicious and balances the avocado flavor nicely. I use whichever yogurt I have on hand and find that most yogurts flavored with fruit work well. If you like your smoothies on the sweet side, feel free to add your choice of sweetener: sugar, Splenda, honey, agave nectar, etc…. For me, the yogurt and coconut water add plenty of sweetness.
I love having this smoothie after a grueling workout. It’s refreshing and cools me down instantly. Because it’s thick, the drink is really satisfying. And, the best part is, it’s good for you! Enjoy!
1 cup ice
6 oz Greek yogurt with honey or fruit
1/2 cup coconut water
1 large ripe avocado
1 tsp sweetened coconut flakes
sprig of mint
Optional: 1 Tbsp sweetener of your choice
Cut the avocado in half and remove the pit. Scoop out the flesh using a spoon. Add all ingredients into a blender. Blend on high for 1 minute or until smooth and creamy. Sprinkle with coconut flakes and garnish with mint. Enjoy right away!
Yields: 2 cups, approximately 16 ounces
