In this simple recipe for Peanut Sticky Rice, glutinous rice is combined with hearty peanuts to make a dish that is delicious and satisfying. Topped with a crunchy peanut sesame topping, it's a wonderful combination of starchy and mealy with just a touch of sweet and salty. Peanut Sticky Rice makes an awesome hot breakfast or a tasty snack any time of the day.
Transfer the raw shelled peanuts into a medium bowl filled with cold water. Swirl the peanuts gently in the water for 30 seconds. Remove any separated skin and discard. Drain well. Transfer the peanuts to a rice cooker. Add 1/4 tsp salt and 3 cups water. Set the rice cooker to the "Mixed" or "Sweet Rice" cooking mode and press "Start". Allow to cook for the duration, approximately 1 1/2 hours.
Transfer the glutinous rice into a medium colander and bowl filled with cold water. Wash the rice by gently swirling in the cold water. Pour out the rinse water. Repeat this washing process 1 or 2 more times or until the rinse water is mostly clear. Toss the rice in the colander a few times to remove any remaining water. Spread out the rice and allow to drain.
After the peanuts are done cooking, transfer to a colander and allow to drain for a few minutes. Transfer the cooked peanuts back into the rice cooker. Add the glutinous rice, remaining 1/4 tsp salt and remaining 1 cup water. Gently combine everything together. Spread out into an even layer making sure the rice is covered with water. Set the rice cooker to the "Mixed" or "Sweet Rice" cooking mode and press "Start". Allow to cook for the duration, approximately 40 minutes. Once the cook time is completed, gently combine the Peanut Sticky Rice using chopsticks.
To Make the Topping:
Transfer the roasted peanuts into a small food processor. Pulse for just a few seconds to chop. Add the roasted sesame seeds, sugar and salt. Pulse again for a few more seconds. Transfer to a small bowl.
To Serve:
Transfer a generous amount of the Peanut Sticky Rice onto a plate. Sprinkle with the peanut sesame topping. Enjoy while hot!
